serves:

pre-heat oven to 350 degrees
cream together:
6 T. soy margarine
3/4 C. unrefined sugar
in a medium bowl combine the following:
1 C. plain soy yogurt
1/4 C. cocoa powder
2 oz chocolate chips, melted
1 1/2 C. white spelt flour
1/2 t. baking soda
1/2 t. baking powder
1/4 t. sea salt
mix two mixtures together and pour batter into lined muffin pan.
bake for 28-30 minutes or until wooden pick comes out clean. let cool before
frosting.
chocolate frosting
1 C. unrefined powdered sugar
4 oz. chocolate chips, melted
1/4 C. non-hydrogenated shortening
1 T non-hydrogenated soy margarine
using a mixer combine ingredients in a medium bowl.
frost cupcakes with frosting and garnish with fresh fruit
