coconut-lime cupcakes

serves: 12
pre-heat oven to 350 degrees

cream together:
6 T. non-hydrogenated soy margarine
3/4 C. unrefined sugar

in a medium bowl combine the following:
1 C. plain soy yogurt
1 T. grated lime peel
1 t. lime juice
1 1/2 C. white spelt flour
1/2 t. baking soda
1/2 t. baking powder
1/3 t.sea salt
1/3 C. vegan sour cream

mix two mixtures together and pour batter into lined muffin pan. bake for 25-30 minutes or until wooden pick comes out clean. let cool before frosting.

TIP: MIX BY HAND TO KEEP LIGHT & FLUFFY

lime frosting
1 C.unrefined powdered sugar
2 t. lime juice
1 t. grated lime peel
1/4 C. non-hydrogenated shortening
1 T + 1 t. soy margarine
using a mixer combine ingredients in a medium bowl.
frost cupcakes with frosting and garnish with coconut and fresh grated lime
